We believe that octopus is the essential ingredient in takoyaki. The juice inside is what makes takoyaki so delicious.
Peacock uses a steamer to cook the octopus to keep rich and juicy flavours.
Octopus are usually portrayed as cute sea creatures spurting ink, but in reality the octopus is a carnivourous animal that hunts crustraceans such as shrimp, crab, shellfish as well as fish.
When the octopus hunts crustaceans such as shrimp, antenna
or fish bones can get stuck in their own bodies. This can be
dangerous for consumers. Peacock makes a great effort to
remove all foreign materials using various safety procedures.
We have procedures in place in both our octopus factories and
our takoyaki factories.
We check every single piece of cut octopus from
every angle with our bare hands and also perform
repeated visual inspections to ensure any foreign
materials are removed.
In addition, we use a magnifying glass to
find very small materials that may be
attached to the surface of the octopus. We
have special equipment and a ‘light table’
to detect foreign materials. We also have a
metal detector to detect and remove any
metal objects. This is how we provide safe
and delicious octopus.
Most of the red beans Peacock uses are imported from foreign countries. For domestic beans, we use only red beans from the Tokachi area. Tokachi has well-drained soil, and together with long daylight hours and stable weather, provides the perfect conditions for growing red beans.
The red beans have been strictly selected from bean farmers by the red-bean paste maker. Our red-bean paste makers specialize in making top-quality red-bean paste.
The red bean paste is made differently for shops and for frozen food products. The amount of sugar and starch content is carefully controlled. The process is designed to match the needs of the end-product. Peacock does not use any chemical preservatives. Therefore, our customers can enjoy the light simple sweetness of our bean paste.
Peacock’s roasted pork fillet is homemade in each shop.
Roasted pork fillet is one of the most popular toppings for Chinese noodles. Many people save the fillet until the end for the enjoyment of their meal.
Our staff takes great care of our pork fillets, from kitchen to plate.
Each piece of pork has a slightly different quality, such as its shape,
thickness, and fatiness. This is why we prepare our pork fillets in the
shop to ensure a top-quality dining experience.

using our original sauce.
Peacock believes that the flavor from our soup stock is the deciding factor for the deliciousness of our takoyaki. The first flavor from our soup is the smell of the bonito. Then the umami flavor hits your tongue. We developed our original soup stock so our customers can enjoy the afterglow of the umami flavor.
In addition to the dried bonito extract, adding finely crushed bonito powder from Yakitsu enhances the flavor. We use soy sauce from a long standing soy sauce maker established in 1889 to bring you our own original soup stock with the excellent combination of umami and flavor.
Round Takoyaki, bell shaped takoyaki, takoyaki from food stands or food courts , frozen takoyaki cooked in the microwave or deep fried, green onion takoyaki, rice powder takoyaki and so on… There are many kinds of takoyaki and choosing the best flour mix for each style is very important. Okonomiyaki and taiyaki are the same.
The protein in flour changes into starch when it is heated up. That helps retain the shape of the takoyaki.
Furthermore, the texture of the flour when it is cooked has different characteristics depending on the production area or brand.
Peacock selects the most suitable flour depending on the end product using our special know-how.

The tempura bits are very important to our process. They seem to disappear after cooking, but during the cooking process they rapidly increase the heat and cook the takoyaki from the inside. Tempula bits play a big role in the preparation of tasty takoyaki.
Most of the cabbage Peacock uses comes from contract farmers.
In order to control fertilizers and agrochemicals and ensure a steady supply of materials, Peacock has produce centres from Hokkaido in the north to Aichi in the south.
Every area in Japan has a different climate and different type of soil, or a slightly different way of farming. As Japan has four seasons, we can buy and enjoy the best produce from each area throughout the year.
Peacock prefers to use the kind of cabbage that has the texture which suits our products, such as takoyaki and okonomiyaki.
The vegetable companies we use keep their vegetables in cold storage at 5℃ throughout the year and send us fresh material safely and promptly.
At out factory in Oguni, our workers remove the large cores of the cabbage and visually inspect all chopped cabbage to prevent foreign substances entering our products.
The noodles for our Ramen and Yakisoba are produced using our original recipes together with our partner manufacturers.
Peacock uses high quality blended flour to make flavoured noodles. Also, we adjust our flour blend to ensure it matches the soup and sauce that are popular at different times of the year.
The noodles for our Ramen are rubbed individually to increase firmness. The noodles for our Yakisoba are chewy but always go down smoothly.
As changes in temperature and humidity affect noodles,
Peacock makes their noodles daily by hand in our factories.

Water is an important factor in making delicious takoyaki.
If the water is not delicious, the takoyaki will not be delicious. Peacock built a factory in a place with many insects because this confirm the quality of the water.
The factory is located in the middle southern district of Niigata, and srrounded by Sekita Mountains and Hachikoku Mountains in east and west. The Shibumi River of the Shinano River water system flows through at the center of town. Rich water and green location. It is the reason of the rich water source unique topography which is srrounded by montains.
